La Scolca's Soldati Pas Dosé is a Classic Method sparkling wine made entirely from Cortese grapes from the Gavi DOCG hills in Piedmont. Characterized by the absence of added sugars, it is an authentic Pas Dosé. Fermentation takes place in the bottle, followed by over 24 months of aging on the lees, which gives it elegance, complexity, and a fine, long-lasting perlage.
