Calypsos is a 100% Timorasso dei Colli Tortonesi, a pure expression of the native Piedmontese grape. Vinification involves soft pressing and fermentation in stainless steel, followed by brief bottle aging to complete the balance. It has a straw yellow color, with aromas of ripe fruit, quince, hazelnut, and light mineral notes.
